Garlic Beef and Asparagus Stir Fry
Ingredients:
- 1 lb flank steak, cut into 1 inch cubes
- 3/4 cup Hoisin garlic sauce
- 1 lb asparagus, cut into 1-2 inch lengths
- 1 cup roasted cashews
- 1 Tbsp vegetable oil
- salt and pepper to taste
Directions:
- Marinade the already cut up steak in 2 Tbsp of the Hoisin sauce for 10 minutes
- Heat oil in a heavy skillet over medium high heat, add steak and stir fry for about 3 minutes, until browned but not fully cooked
- Remove the steak from heat, add the asparagus to the skillet and stir fry for about a minute
- Add 1/2 cup water to skillet, cover, and let asparagus cook for another 2 minutes
- Return beef to skillet and add remaining sauce
- Stir fry until everything is well-mixed and beef is cooked through, about 1 minute more, and add cashews
- Serve and add salt and pepper as needed.
